    Isshiki takes on Saito in the sushi theme, who wins and what diff?

    Bonus: theme is Japanese food, does it make a difference?

    We'll see how Saito handles Mimasaka, but for now he's the safe bet in this match.

    Anything Mimasaki achieves belongs solely to himself.

    and Saito is known as the strongest sushi chef in Tootsuki. He wins.

    Isshiki loses in a sushi battle but wins in an all out battle. The only 3 I am confident would beat him are Megishima, Rindo, and Tsukasa. He has that enigmatic hype about him as if everything is fun and games but when he finally gets serious he'll be a monster.

    It is clearly implied that he is not just better than nene but on a completely different tier.

    So, this is Totsuki's strongest Japanese cook vs the strongest Sushi cook, in each of their specialties? It's obvious who would win lol.

    Scenario 1 - Theme: Sushi - Saito wins mid-diff. 3-0

    Scenario 2 - Theme: Japanese - Isshiki wins mid-diff. 3-0

    It looks like your guess turned out correct. The current list of Totsuki cooks in strength has Isshiki being below Megishima and Eishi(Rindo is not on the list), and above Momo, and by extension of being above Momo, Saito as well.

    Every "elite" chef in this manga is proficient in other areas outside of their specialty.

    Yep, they are all likely good in Japanese cooking, because of course they're Japanese, but Isshiki is just on another level in this compared to them. Even though he is disowned, he is one of the heirs of one of the two biggest Japanese cooking families, and he does not only have that knowledge, but he also knows how to incorporate other cooking specialties into it.

    Well of course the most important chefs can cook outside of their speciality, but these two matches only deal with their specialties, due to the themes. In addition, since they are the strongest at their specialty, they should have a decisive, significant result in the win of the match with their specialty as their theme. That is why I think the difficulty is mid, not high.
