It looks like people were never satisfied with Saiba, always waiting for the next creation.
Was he broken because of the pressure and expectations?
That's what it looks like for me. Must be tough being the best cook in your generation and when seomeone taste your dish they only care about what's next. He probably felt like people didn't really appreciate his cooking.
This guy, albeit a genius, pursued the unobtainable even for a prodigy like him. Sure this allows him to keep improving over time, but it also seems to be having an impact on his behavior in the kitchen.
Here's hoping he pulled some crazy shit in Blue which we'll see next chapter.

yes, that's the implication. as gin puts it - jou has started stomping all these random chefs left and right to avert from the fact that he is terrified of becoming stagnant. because nobody in the school (outside of azami, gin and the fourth seat) dares to fight him anymore, he ventures out of the academy to prove himself as a prodigy.
it's a common theme in the manga. those that already stand at the top lose their ambition to break even more frontiers, because they lack a goal or are simply afraid of never-ending expectations (which is ironically what causes their stagnation). we have seen the former with eg. shinomiya.
with jou, it seems to be a split between these two. he doesn't seem to have a concrete goal anymore, as he is stomping all his competition even in extremely professional settings, and he is becoming afraid of the fact that he is seen as such a great cook that he is never allowed to stagnate. his fame is starting to exceed his actual identity, both as a person and as a cook, and he is becoming dependent on his image as the 'asura' - not the other way around.
additionally, jou seems to hold those who expect him to continuously flash them with even greater dishes in contempt. it's why he began making the bizarre dishes - it's a device for him to spit in the faces of those who expect so much of him, and it's a device for him to have an excuse to not make any progress ('it was meant to taste bad').

The direction it would take was expected; however, it was executed very well. The man covered in scars, walking through an endless storm, is a brilliant metaphor.
